
Chicken Soup
Ingredients:
2 lbs of chicken breast baked & cut into one inch pieces
1 head of broccoli – cut in one inch pieces; peeled, stemmed
1 large onion – diced
2 large mushrooms
1 zucchini – diced into 1/2 inch pieces
1 summer squash – diced into 1/2 inch pieces
1 cup of baby carrots – cut in half
1 thirty-two ounce can of chicken broth
1 tbsp fresh parsley finely – chopped if desired
16 ounces of low carb noodles
Salt & pepper may be added after serving
Directions:
Place all but low carb noodles in a crock pot.
Cook on high for 5 hours.
Right before serving, cook noodles as directed & stir into soup.
Total Carb Count: 5g per serving
