
Crustless Quiche
Ingredients:
1/2 cup diced onions
1 package frozen chopped spinach, cooked and drained well
3 eggs
2 cups shredded cheddar cheese
1 1/2 cups fat free cream
salt and pepper as desired
1.) Saute onions in water until tender.
2.) Oil a 9″ pie plate with a fat free spray.
3.) Spread onions and spinach evenly on the bottom.
4.) Place cheese on top spreading evenly.
5.) Beat eggs well and add cream, mixing well; add salt & pepper if desired.
6.) Add egg mixture slowly to the ingredients in the pie plate.
7.) Bake at 350 for 25 minutes or until eggs are set in the middle.
8.) Cool for 10 minutes before cutting.
