Kentucky Christmas Ham

Ingredients Kentucky Christmas Ham

1 Ham – 12 to 14lbs (canned works good too)
3/4 cup bourbon (we like Jim Beam the best)
2 cups firmly packed DARK brown sugar!
1 tablespoon orange marmalade
1 tablespoon dry mustard
1/8 tsp ground coriander seed

* Bake ham as directed.
Remove from oven about 30 minutes before it is done.
Increase the oven temp to 450

*If the ham has a rind, once it is cool enough to handle,
cut away the rind and trim the fat to about 1/2 inch thick.
Score by cutting deeply in a crisscross pattern.

* Using a pastry brush, brush the bourbon all over the ham.
In a small bowl, stir together the remaining bourbon, brown sugar, marmalade, mustard and coriander.
Pat the mixture firmly over the ham.

Return ham to oven for the remaining 30 minutes at 450 (I reserve enough of the mixture to baste it twice more about every ten minutes while it finishes baking!)
