Low Carb Artichoke Baked Chicken

Low Carb Recipe:
Artichoke Baked Chicken

Serves 4

Ingredients:

4 boneless chicken breasts
eight ounce can artichoke hearts
1/2 cup low fat ricotta cheese
1/2 cup parmesan cheese
Salt and pepper as desired

Directions:

1.) Mash artichoke hearts until chunky but fairly smooth.
2.) Add ricotta and parmesan cheese to artichokes; add salt and pepper.
3.) Place chicken in an oiled baking dish, breast side up.
4.) Smother with artichoke mix.
5.) Bake at 375 degrees for 25 to 30 minutes or until chicken is
throughly cooked in the middle and topping is bubbly and brown.
